Comfort Food Recipe? Yes please!

Since today marks the first day of our winter break, I’m posting this weekend’s blog post just a bit early and kicking it off with some cozy comfort food: Chicken & Noodles! It’s a family favorite over here, and so quick and easy to throw together in under 30 minutes. Yes, seriously, under 30 minutes and just as good as grandma’s house. (Ok, almost.)

The secret? A rotisserie chicken! Our Sam’s Club sells these MASSIVE Rotisserie chickens for $4.88 a piece. Otherwise our local grocer, Fareway, often has them in the cold section the “next day” discounted to $5.99 instead of fresh & hot for $8.99. I often buy 4-6 of them at once to shred and freeze them ahead of time so I can pull out juicy, seasoned, shredded chicken at a moment’s notice for chicken pot pies, chicken & noodles, salads, or other various recipes.

Our family of 6 usually pairs this with some warm Hawaiian rolls or garlic breadsticks for a satisfying meal. There’s never enough for leftovers and rarely second helpings, so don’t be afraid to double the recipe!
